Easy and Delicious Vegetable Soup

We are all busy and constantly on the go. Cooler weather brings along the convenience of adding a soup or two to your weekly menu. Vegetable soup is quick, inexpensive, and delicious.
1 32 oz bag of mixed frozen vegetables
1 small yellow onion
2 stalks of celery chopped
2 carrots chopped
3 small potatoes
3 fresh thyme sprigs
1/2 tsp salt (optional)
1/2 tsp all purpose seasoning ( optional)
2 cartons of 32 oz vegetable broth

1. Saute the chopped onions in 1tsp of grapeseed oil. Add 1 32 oz carton of vegetable broth and bring to a boil.
2. Add the potatoes, carrots salt,seasoning, thyme and allow to simmer for 15 min.
3. Remove the thyme sprigs. Add the frozen vegetables and allow to cook for 10 min. Add your favorite toppings and enjoy
