Vegan Broccoli Cheddar Soup

This cheeseless recipe will turn out to be extremely delicious. There are various options and substitutions that can be made along the way.

Ingredients 

2 cups northern white beans 

2 cups of vegetable broth

1 c of fresh or frozen broccoli 

1 can coconut cream

2 tsp pepper

3 tbsp nutritional yeast

1tsp salt

1/2 white onion

4 chopped carrots 

Soak the northern white beans in vegetable broth over night. To substitute the white beans 2 large potatoes can be used instead.

 In a medium saucepan cook the white beans on medium heat until tender. Set aside to cool 

Chop and saute the white onion . Add the carrots and stir for 1 minute.  Add the vegetable broth and bring to a boil. Once boiling turn down to low to simmer.

Take the cooled white beans and pour into a blender. Add the can of coconut milk, nutritional yeast, salt and pepper. Blend until a puree.

Add the white bean puree to the pot of broth. Allow to simmer for 10 minutes. Add the broccoli and cook for another 10 minutes.Add your favorite soup toppings such as fried onions and enjoy!
